Roasted butternut pumpkin, chickpeas, spinach, almonds and spices encased in filo pastry, served with a sweet capsicum and coriander yoghurt (V without yoghurt)
Baked layers of eggplant, zucchini, sliced potato and cannellini beans with a rich basil, tomato and red capsicum sauce, topped with béchamel and melted cheese.
Flour tortillas filled with beans, corn and cheese. Baked in mole sauce and served with garlic rice.
